Southwest Grilled Chicken Marinade

This spicy, fruity grilled chicken marinade is enhanced with chilies, orange juice and garlic, and is sure to give your poultry plenty of exciting flavor. This is a vibrant grilled chicken marinade which is easy to prepare and very tasty. If you are new to making marinades for chicken, give this one a go. It really could not be easier and even a beginner can master this.

Although the recipe calls for ‘chicken pieces’ you might like to use only legs or only breast, the reason being different cuts of chicken have different grilling times. If you want to use different cuts of chicken, add the legs and thighs a few minutes before the breast. They contain more fat and take longer to cook through. You might have a package of mixed chicken pieces to use up, or maybe you only like breast or prefer drumsticks. Rest assured than any kind of chicken will work well with this recipe.

Grilled Chicken Marinade with Chipotle Chilies

Summary: Garlic, orange, chilies and more combine to make this delicious Southwest style chicken. Once the chicken has marinated to perfection, it is then grilled to make a truly mouthwatering meal.

 

Ingredients

  • 4 whole chicken pieces
  • 3 tablespoons pureed chipotle chilies in adobo sauce
  • 2 whole minced garlic cloves
  • ¼ cup extra-virgin olive oil
  • ⅓ cup orange juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

Put the chilies, garlic, extra-virgin olive oil, orange juice, salt and black pepper in a bowl and stir well.

Add the chicken and make sure it is evenly coated.

Alternatively you can mix the marinade in a big Ziploc bag, add the chicken, and squeeze out the excess air.

Cover the bowl with plastic wrap, or seal the Ziploc bag.

Marinate the chicken in the refrigerator for 4 hours.

Grill the chicken for 10 minutes per side or until it is cooked through.

Who can resist the allure of grilled chicken? It smells so good when it cooks, looks so tempting when it comes off the grill and the flavor is out of this world? Using a marinade is always a good idea when grilling chicken, because it will add plenty of flavor and also boost the moisture content of the chicken to help it stay juicy. You can see chicken legs in this photo, but feel free to use wings, breast or mixed chicken pieces if you prefer. Any of those would work just fine with the Southwestern flavors featured in this chicken marinade recipe.
