Ingredients
1 lb ground beef
½ cup chopped onion
2½ cups chunky salsa
1 cup shredded Cheddar
1 drained 7 oz can sliced pitted ripe olives
1 drained 7 oz can whole kernel corn
1 teaspoon chili powder
1 teaspoon ground cumin
½ chopped green bell pepper
1 lb cottage cheese
Large bag of tortilla chips
Instructions
Preheat the oven to 375 degrees F.
Brown the ground beef in a large skillet over a medium heat and drain off the fat.
Return the meat to skillet and add the onions and peppers.
Cook until tender, stirring occasionally.
Add the salsa, corn and seasonings, and mix well.
Layer ? of the meat mixture and ½ each of the tortilla chips and cottage cheese in a 13 x 9 inch baking dish.
Repeat these layers and cover with the remaining meat sauce.
Sprinkle with cheese and olives.
Bake for 30 minutes or until it is heated through and the cheese is bubbly.
