Hearty Family Beef Lasagna
Making your own lasagna rather than buying a frozen one means you can expect a tasty, fresh result. This one is rich in beef, tomatoes and red wine too.

1 ½ lb. Lean ground beef
1 onion finely chopped
1 green bell pepper finely minced
1 yellow bell pepper finely minced
1 large can tomato sauce
1 large can chopped tomatoes
1 small can tomato paste
½ tsp. Garlic finely minced
½ tsp. Oregano
½ tsp. Basil
½ tsp. Fresh chopped parsley
1 ½ cup red cooking wine
1 box uncooked Lasagna
? cup sugar
1 13x9x2 in pan for baking Lasagna ( preferably ceramic or stainless steel)
1 3 Qt. Pot to cook and simmer sauce
1 Skillet to brown meat and onions
A colander to drain grease from meat
Large cooking/stirring spoon
How to Prepare Lasagna:
Preheat oven to 375 degrees Fahrenheit. Spray 13x9x2 in pan with cooking spray.
Brown ground beef
Remove seeds and stems from bell peppers and chop them fine.
Chop onion as well. Add onion and peppers to ground beef.
Cook a few more minutes till onions are tender.
Drain the ground beef onion and pepper mixture in the colander to remove grease.
Rinse and dry the skillet.
Add beef back to skillet and add garlic.
Simmer about 1 minute. Transfer meat mixture to 3 Qt. cook pot.
Add tomato sauce, paste and chopped tomatoes to cook pot.
Add Oregano, basil and parsley to cook pot.
Add sugar and red wine.
Let simmer on low for approximately 35 minutes.
Be sure to stir often so the sauce does not scorch.
Assemble the Lasagna:
In prepared 13x9x2 inch pan lay 3-4 uncooked Lasagna noodles across bottom.
Add a layer of Mozzarella cheese.
Lay several dollops of Ricotta on this layer of Noodles, about every 2-3 inches.
Now sprinkle this layer with Parmesan cheese.
Add second layer of noodles and beef sauce.
Repeat with cheeses.
Repeat layers and finish with sauce.
Spread the last of meat sauce and cheese over the last layer of noodles.
Cover pan with Aluminum foil loosely so the aluminum foil does not touch sauce and cheese on top.
Bake in oven for approximately 35 minutes.
Remove foil and bake for an additional 10 minutes.
Then remove Lasagna from oven and allow to sit for about 15 minutes before serving.
