Recipe: Herby Chicken Buttermilk Marinade
As well as being excellent with chicken, this chicken buttermilk marinade works well with pork. The buttermilk not only offers a tangy kick but it also doubles up as a tenderizer for the meat, making your chicken soft and delicious. Chicken might not need to be soaked in the marinade for hours like tough cuts of beef but changing the texture a little can result in a softer finish and a lot of people like this. Marinate the chicken for a couple of hours, then discard the marinade and cook the chicken – dinner could not be simpler.
There are different chicken marinade recipes featuring buttermilk, and some are very simple, requiring just the buttermilk and a pinch of salt or perhaps some pepper. This one uses fresh and dried herbs, as well as mustard and honey. Mustard and honey are lovely together since they are complete opposites yet complement one another and herbs always work well with chicken. Chicken Buttermilk Marinade with Honey and Mustard
- 1 teaspoon salt
- ½ teaspoon dried marjoram
- 1 tablespoon finely chopped fresh rosemary
- ½ teaspoon black pepper
- 1 tablespoon honey
- ½ teaspoon dried sage
- 1 cup buttermilk
- 1 tablespoon Dijon mustard
- ½ teaspoon dried thyme
Whisk all the ingredients together in a bowl.
Marinate your chicken for 1 to 4 hours.
Discard the marinade and cook the chicken until no pinkness remains in the center.
